Lavender biscuits with cranberry

    These lavender biscuits make a nice gift. So instead of bringing real flowers, I decorate the biscuits like flowers!

    Makes: 40 biscuits

    • 150g caster sugar
    • 1 lemon, zested and juiced
    • 2 teaspoon dried culinary lavender
    • 220g plain flour
    • 1/4 teaspoon baking powder
    • 1 pinch salt
    • 60g butter, at room temperature
    • 1 egg yolk
    • 1 1/2 teaspoons vanilla extract
    • For the decoration
    • 1 (100g) bag almond flakes
    • 40 dried cranberries

    1. In a bowl add sugar, lemon zest and lavender and rub between your fingertips till sugar is fragrant.
    2. Add flour, baking powder and salt. Add butter and make a well in the centre.
    3. In a small bowl stir lemon juice, egg yolk and vanilla extract and pour into the well. Knead everything till well combined and holding together in a ball.
    4. Shape mixture to a log of 6cm in diametre, wrap in greaseproof paper and refrigerate for 40 minutes.
    5. Preheat oven to 190 C / Gas 6.
    6. Remove mixture from fridge and cut into 15mm slices. Decorate with a flower pattern using almond flakes and cranberries.
    7. Place biscuits on ungreased baking tray and bake in the preheated oven till the biscuits are golden brown around the edges, about 6 to 7 minutes.
    8. Carefully place on a wire rack to cool. They will harden as they get cooler.
