These German Christmas biscuits with hazelnuts are especially pretty when decorated with glace cherries.

Makes: 2 baking trays
150g butter, slightly softened
120g icing sugar
1 egg yolk
250g plain flour
70g unsweetened cocoa
100g finely ground hazelnuts
For the icing
200g icing sugar
3 tablespons lemon juice
morello glace cherries, halved (optional)

In a bowl mix butter with icing sugar and egg yolk till combined. In another bowl mix cocoa and flour, and sift over butter mixture. Mix till it holds together as a ball. Place in an airtight container or wrap in cling film and refrigerate for 1 to 2 hours.
Preheat oven to 190-200 C / Gas 4-6. Grease a baking tray.
Roll out mixture on a lightly floured working surface about 4mm thick. Using a large star shaped biscuit cutter, cut out stars and place on baking tray. Backofen ca. 7 - 10 Minuten backen.
Bake in the preheated oven for 7 to 10 minutes. Let cool.
In a bowl stir icing sugar with enough lemon juice to make a thick yet still spreadable icing. Spread icing on biscuits and decorate each star with a cherry half.
