Quick raspberry ice cream

    This super easy homemade raspberry ice cream is always a hit with children but you can also give it a festive look and freeze it in star shaped moulds for a holiday treat for adults and children.

    Serves: 4 

    • 125g fresh or frozen raspberries
    • 150ml double cream
    • 2 tablespoons Demerara sugar, more to taste

    1. Puree raspberries. Add to a bowl and stir in cream and sugar till dissolved.
    2. Place mixture in an ice cube tray or in star shaped moulds. Place a toothpick in each mould and let freeze overnight, till solid.


    If the toothpicks do not remain upright, wait a little and insert them once the mixture has solidified slightly.
