Potato salad with black lentils

This unusual colourful potato salad is made with black lentils, which you can find at Indian grocery stores and online.

Ingredients

- 400g salad potatoes
- 150g black lentils (beluga lentils)
- 1L vegetable or chicken stock
- 1 red pepper, seeded and diced
- 1 apple, cored and diced
- For the dressing
- 5 tablespoons mayonnaise
- 150g natural yoghurt
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- minced fresh tarragon, to taste
- white pepper
- cayenne pepper
- salt

- Boil potatoes in a pot of boiling water till they can be pierced with a knife, about 30 minutes. Peel while stilll warm, let cool and cube.
- Add lentils and stock in a pot. Bring to the boil, then reduce heat and cook till lentils are soft, about 40 minutes. Drain.
- In a small bowl stir mayonnaise, yoghurt, mustard, honey and tarragon till smooth. Season with pepper cayenne and salt.
- Add potatoes, lentils, pepper and apple to a bowl, toss with dressing and cover. Marinate in the fridge for 30 minutes to 1 hour.
