Potato salad with black lentils

    This unusual colourful potato salad is made with black lentils, which you can find at Indian grocery stores and online.

    Serves: 6 

    • 400g salad potatoes
    • 150g black lentils (beluga lentils)
    • 1L vegetable or chicken stock
    • 1 red pepper, seeded and diced
    • 1 apple, cored and diced
    • For the dressing
    • 5 tablespoons mayonnaise
    • 150g natural yoghurt
    • 1 tablespoon Dijon mustard
    • 1 tablespoon honey
    • minced fresh tarragon, to taste
    • white pepper
    • cayenne pepper
    • salt

    1. Boil potatoes in a pot of boiling water till they can be pierced with a knife, about 30 minutes. Peel while stilll warm, let cool and cube.
    2. Add lentils and stock in a pot. Bring to the boil, then reduce heat and cook till lentils are soft, about 40 minutes. Drain.
    3. In a small bowl stir mayonnaise, yoghurt, mustard, honey and tarragon till smooth. Season with pepper cayenne and salt.
    4. Add potatoes, lentils, pepper and apple to a bowl, toss with dressing and cover. Marinate in the fridge for 30 minutes to 1 hour.
