Marinated courgette

    Marinated courgette can be used for different things: as part of an antipasti platter, as a sandwich filling, or with pasta. A mix of yellow and green courgette makes a nice colour contrast.

    Serves: 6 

    • 350g courgette (yellow and green)
    • 1 pinch salt
    • 200ml olive oil
    • 20ml balsamic vinegar

    1. Slice courgette 1cm thick and generously sprinkle each slice with salt. Leave to "sweat" for 30 minutes, then dab dry with kitchen paper.
    2. In a frying pan heat the olive oil and fry courgette on both sides till brown. Drizzle with balsamic vinegar whilst still lukewarm.
    3. Place in a container with a lid and refrigerate for up to 1 week.
