Walnut macaroons

    In Germany macaroons - which are mostly gluten free and dairy free - are baked on edible rice paper, which prevents them from sticking to the baking tray. If you cannot find precut circles, buy sheets of rice paper online and in specialty stores, and cut the to the desired size.

    Makes: 2 baking trays

    • 150g caster sugar
    • 2 teaspoons vanilla sugar
    • 1 egg
    • 200g coarsely ground walnuts
    • rice paper (edible wafer paper)
    • icing sugar
    • lemon juice

    1. Preheat your oven to 150 C / Gas 2.
    2. In a bowl beat sugar, vanilla sugar and egg till foamy. Add walnuts and stir till evenly combined. Shape mixture into walnut size balls and place onto small edible paper circles.
    3. Bake in the preheated oven till firm, about 25 to 35 minutes. If desired, drizzle or brush with icing made of icing sugar and a little lemon juice.
