A delicious combination of pork chops seasoned with cumin and cinnamon, green beans and tomatoes. Delicious served with mash or rice.

1 teaspoon cinnamon
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon freshly ground black pepper, or to taste
4 boneless pork chops
1 tablespoon vegetable oil, or more to taste
1 onion, thinly sliced
3 cloves garlic, minced
450g fresh green beans, trimmed
2 large tomatoes, chopped or 1 (400g) tin of chopped tomatoes
120ml chicken stock

Mix cinnamon, cumin, salt and pepper together in a bowl. Sprinkle mixture over both sides of the pork chops.
Heat oil in a large pan over medium heat. Add pork chops and brown, 3 to 4 minutes per side. Transfer pork chops to a plate. Add onion and cook until softened, about 2 minutes. Stir in garlic and cook for a minute. Mix in green beans and cook, stirring occasionally, another 2 minutes. Add tomatoes and chicken stock and bring mixture to a simmer, about 5 minutes.
Return pork chops to pan; cover and reduce heat to low. Cook until pork chops are cooked through and no longer pink in the centre, about 15 to 20 minutes. Season with salt and pepper before serving.
