    Easily doubled for a crowd, cottage cheese and soured cream are the unique elements to this macaroni cheese recipe.

    Serves: 6 

    • 225g macaroni
    • 225g mature Cheddar cheese, grated
    • 350g natural cottage cheese
    • 250ml container soured cream
    • 4 tablespoons grated Parmesan cheese
    • salt and pepper to taste
    • Topping
    • 125g dried breadcrumbs
    • 60g butter, melted

    1. Preheat oven to 180 C / Gas mark 4. Bring a large pot of lightly salted water to the boil, add pasta, and cook until al dente; drain.
    2. In 22x33cm baking dish, stir together macaroni, grated Cheddar, cottage cheese, soured cream, Parmesan, salt and pepper. In a small bowl, mix together breadcrumbs and melted butter. Sprinkle topping over macaroni mixture.
    3. Bake 30 to 35 minutes in the preheated oven, or until topping is golden.
