Pasta salad with pesto rosso

    I usually have spaghetti left over so I mostly make spaghetti pasta salad but any other pasta is good too.

    Serves: 4 

    • 250g spaghetti or other pasta
    • 2 heaped tablespoons pesto rosso
    • 2 tomatoes, diced
    • 40g grated Parmesan cheese
    • olive oil
    • salt and pepper
    • minced fresh basil
    • 40g rocket
    • balsamic vinegar

    1. Cook pasta following packet instructions till al dente (or use cooked leftover pasta). If using spaghetti, break in half of cut in half if already cooked.
    2. Toss pasta whilst still warm with pesto rosso, tomatoes, Parmesan cheese, olive oil, salt and pepper. Cover and refrigerate for a few hours to overnight.
    3. Just before serving add basil and rocket and toss. Add balsamic vinegar, olive oil, salt and pepper. Be generous with the oil and vinegar, pasta absorbs a lot.
