Cold pasta with pesto

    When I have spaghetti left over, I don't bother cooking them, we just eat them cold with some fresh veg and pesto. Very easy and quick.

    Ingredients
    Serves: 4 

    • 250g cooked spaghetti
    • 2 to 3 tablespoons pesto
    • 1 red pepper, seeded and diced
    • 1 to 2 tomatoes, diced or 8 cherry tomatoes, halved
    • 1 to 2 tablespoons olive oil
    • pitted black olives, to taste
    • salt and pepper

    1. Add spaghetti to a bowl with all remaining ingredients and toss.
