Caesar salad with dressing from scratch

    Making your own salad dressing for caesar salad is not difficult but you need to make sure you use very fresh eggs from a reliable source.

    Serves: 4 

    • 1 iceberg lettuce
    • 3 egg yolks
    • 2 teaspoon Dijon mustard
    • 1 teaspoon salt
    • 1 pinch caster sugar
    • 1 large lemon, juiced
    • 6 tablespoons vegetable oil
    • 2 garlic cloves, minced (optional)
    • 1 anchovy fillet, minced (optional)
    • croutons (optional)

    1. Wash and dry salad and tear into bite size pieces.
    2. In a bowl whisk egg yolks with salt, mustard and sugar till smooth. Very slowly add the oil in a thin stream while continuing to whisk till the mixture is thick and smooth. Stir in the lemon juice.
    3. If desired add garlic and/or anchovy, and serve salad with croutons.


    This recipe contains raw eggs. It is recommended that pregnant women, young children and the elderly do not consume raw eggs.
