Pineapple mascarpone dessert

    Dessert does not get easiert than this. The pineapple must be well chilled so pop it in the fridge a couple of hours before.

    Serves: 6 

    • 250g mascarpone or quark
    • 100g caster sugar
    • 2 teaspoon vanilla sugar
    • a few drops natural lemon extract
    • 500g natural yoghurt
    • 1 (432g) tin pineapple chunks, chilled
    • sweetened whipped cream (optional)
    • toasted almond flakes

    1. In a bowl stir mascarpone, sugar, vanilla sugar and lemon extract till smooth and sugar has dissolved. Fold in the yoghurt using a spatula.
    2. Drain pineapple and fold into mixture. Garnish with whipped cream and toasted almond flakes if desired.
