Pineapple mascarpone dessert

Dessert does not get easiert than this. The pineapple must be well chilled so pop it in the fridge a couple of hours before.

- 250g mascarpone or quark
- 100g caster sugar
- 2 teaspoon vanilla sugar
- a few drops natural lemon extract
- 500g natural yoghurt
- 1 (432g) tin pineapple chunks, chilled
- sweetened whipped cream (optional)
- toasted almond flakes

- In a bowl stir mascarpone, sugar, vanilla sugar and lemon extract till smooth and sugar has dissolved. Fold in the yoghurt using a spatula.
- Drain pineapple and fold into mixture. Garnish with whipped cream and toasted almond flakes if desired.
