I love black kale. An easy way to prepare it is just frying it in a little oil. My secret ingredient is maple syrup.

200g black kale (Cavolo Nero) leaves
2 tablespoons olive oil
1/2 onion, sliced thinly
1 garlic clove, minced
1 tablespoon maple sirup
100ml veg stock

Wash kale and cut into strips.
Heat oil in a large frying pan. Add onion and fry till soft. Add garlic and fry for a further 30 seconds. Add maple syrup to deglaze then add kale and fry for 2 minutes whilst stirring. Add broth, cover and increase the heat a little. Cover and cook for a few minutes till the kale is bright green and wilted.
Remove and cook till the liquid has evaporated. Season with salt and serve.
