Clown cupcakes

    We made these clown cupcakes for a circus-themed party for my daughter and the kids loved them. They are easy enough to decorate that the kids can do it themselves!

    • Cupcakes
    • 100g butter, at room temperature
    • 150g caster sugar
    • 2 eggs
    • seeds from 2 vanilla beans, or 1 teaspoon vanilla extract
    • 200g plain flour
    • 1 teaspoon baking powder
    • 1 pinch salt
    • 150ml milk
    • Cream cheese icing
    • 40g butter, at room temperature
    • 150g cream cheese
    • 1/2 teaspoon vanila extract
    • 80g icing sugar
    • Extras
    • 12 jelly snakes or worms
    • 24 mini chocolate chips
    • red milk chocolate pieces such as Smarties® or M&Ms®
    • orange Smarties® or M&Ms®

    1. Preheat the oven to 180 C / Gas 4. Line a 12 hole cupcake tin with paper cases.
    2. Combine butter and sugar in a bowl. Beat using an electric mixer until creamy. Add eggs, 1 at a time, beating well after each addition. Mix in vanilla extract. Stir flour, baking powder and salt together in a separate bowl. Alternate adding flour mixture and all the milk in small amounts, mixing well after each addition.
    3. Spoon cupcake mixture into the paper cases, filling each 3/4 full.
    4. Bake in the preheated oven until tops spring back when lightly pressed, about 20 minutes. Cool in the tin for 5 minutes. Transfer to a wire rack and let cool completely, about 20 minutes.
    5. Combine cream cheese and butter in a bowl. Beat using an electric mixer until creamy. Add icing sugar 2 tablespoons at a time and mix. Add vanilla extract after 1/2 the icing sugar has been incorporated.
    6. Ice each cooled cupcake with a layer of cream cheese icing. Place 2 chocolate chips for eyes, 1 red M&M(R) sweet for the nose and 1 jelly for the mouth on each cupcake. Place 2 rows of orange M&M's(R) on top to make the hair.
