Slow cooker honey, mustard and garlic chicken thighs

    In this easy slow cooker recipe, chicken thighs are seasoned with cumin and paprika, then quickly browned and cooked in the slow cooker with honey, garlic and mustard.

    Ingredients
    Serves: 4 

    • 1 teaspoon ground cumin
    • 1/2 teaspoon dried thyme
    • 1/2 teaspoon paprika
    • 8 skinless, boneless chicken thighs
    • 2 teaspoons vegetable oil
    • 3 cloves garlic, finely chopped
    • 4 tablespoons honey
    • 2 tablespoons Dijon mustard
    • 120ml chicken stock
    • salt and freshly ground black pepper to taste

    1. Combine cumin, thyme and paprika in a small bowl and rub chicken thighs with spice mix on all sides.
    2. Heat oil in a pan over medium heat and brown chicken on all sides, about 10 minutes. Place chicken in a slow cooker. Cover with chopped garlic.
    3. Stir honey and mustard together in a small bowl and pour over chicken. Pour in chicken stock and close slow cooker.
    4. Cook on Low until chicken is cooked through, about 6 hours. Season with salt and pepper.

    Just okay... made recipe as written except did not sear chicken first so we could prep the night before. 6 hours was too long and chicken was a bit dry... 4 hours would probably have done it for small-medium size boneless thighs in a 6 qt crock on low setting. Thyme was overpowering for my taste but the sweet and savory flavor was otherwise good.     This recipe served two purposes: it is dairy and soy free and it uses chicken thighs which my son’s pediatrician recommended for their iron content. It is also delicious! Even my husband liked it and he is skeptical of new recipes. It has the right amount of sweetness with a good mixture of spices. I reduced the cumin to 1/2 tsp for taste and it was just right for us.
