300g fresh strawberries, hulled
3 tablespoons icing sugar
1 dash lemon juice
100ml whipping fresh cream
2 teaspoons vanilla sugar
400g vanilla ice cream
50g white chocolate, finely grated

Place potato ricer in the freezer. Remove ice cream from the freezer to soften it slightly.
Puree strawberries in a blender till smooth. Strain through a fine sieve to remove seeds. Add icing sugar and lemon juice to taste.
Whip cream and vanilla sugar till stiff. Spread half on a plate. Push ice cream through a potato ricer and pour strawberry coulis over it. Sprinkle with white chocolate and decorate with a wafer biscuit. Serve immediately.
