Spaghetti ice cream sundae

    To make this eye catching ice cream sundae, you need a potato ricer, and it needs to be well chilled for best results.

    Ingredients
    Serves: 2 

    • 300g fresh strawberries, hulled
    • 3 tablespoons icing sugar
    • 1 dash lemon juice
    • 100ml whipping fresh cream
    • 2 teaspoons vanilla sugar
    • 400g vanilla ice cream
    • 50g white chocolate, finely grated
    • wafer biscuits

    Method

    1. Place potato ricer in the freezer. Remove ice cream from the freezer to soften it slightly.
    2. Puree strawberries in a blender till smooth. Strain through a fine sieve to remove seeds. Add icing sugar and lemon juice to taste.
    3. Whip cream and vanilla sugar till stiff. Spread half on a plate. Push ice cream through a potato ricer and pour strawberry coulis over it. Sprinkle with white chocolate and decorate with a wafer biscuit. Serve immediately.
