Pasta with rocket and walnut pesto

    A simple and quick pasta dish with a creamy walnut pesto, rocket and sun dried tomatoes.

    Serves: 4 

    • 100g walnuts, chopped
    • 50g grated Parmesan cheese
    • 5 tablespoons olive oil
    • 200ml single cream
    • 500g tagliatelle or other pasta
    • salt and pepper
    • 100g sun dried tomatoes, chopped
    • 200g rocket, washed, dried and torn into pieces

    1. Chop walnuts, Parmesan and olive oil in your processor then slowly add the cream with the machine running. Season with salt and pepper.
    2. Cook pasta in salted water following package instructions. Drain.
    3. In a bowl mix cooked pasta with sun dried tomatoes and rocket and add serve with pesto.
