Courgette with ricotta filling

    In my view you can never have enough recipes for courgette so it doesn't get boring eating courgette when you have a courgette glut from your garden.

    Serves: 2 

    • 2 medium courgette, preferably yellow courgette
    • olive oil
    • 250g ricotta
    • 1 large garlic clove, minced
    • 4 sprigs fresh oregano, minced
    • 4 sprigs fresh basil, minced
    • salt and pepper

    1. Preheat oven to 180 C / Gas 4. Grease a gratin or baking dish.
    2. Cut courgette length wise and remove seeds using a small spoon or a grapefruit spoon. Brush cut side of courgette with olive oil, place them in the dish and bake till they can be easily pierced with a fork, about 15 to 20 minutes.
    3. In a bowl mix ricotta, garlic, herbs, salt and pepper.
    4. Fill courgette halves with this mixture and bake till filling is bubbly, about 20 further minutes.
