In my view you can never have enough recipes for courgette so it doesn't get boring eating courgette when you have a courgette glut from your garden.

2 medium courgette, preferably yellow courgette
1 large garlic clove, minced
4 sprigs fresh oregano, minced
4 sprigs fresh basil, minced
salt and pepper

Preheat oven to 180 C / Gas 4. Grease a gratin or baking dish.
Cut courgette length wise and remove seeds using a small spoon or a grapefruit spoon. Brush cut side of courgette with olive oil, place them in the dish and bake till they can be easily pierced with a fork, about 15 to 20 minutes.
In a bowl mix ricotta, garlic, herbs, salt and pepper.
Fill courgette halves with this mixture and bake till filling is bubbly, about 20 further minutes.
