Quick and easy prawn curry

    This flavour packed curry sauce complements the prawns perfectly and it's a quick and easy meal! Serve with hot cooked rice.

    Serves: 4 

    • 2 tablespoons peanut oil
    • 1/2 onion, minced
    • 2 cloves garlic, chopped
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cumin
    • 1 1/2 teaspoons ground turmeric
    • 1 teaspoon paprika
    • 1/2 teaspoon Indian chilli powder
    • 1 (400g) tin chopped tomatoes
    • 1 (400g) tin coconut milk
    • 1 teaspoon salt
    • 450g cooked and peeled prawns
    • 2 tablespoons freshly chopped coriander
    • 1/2 teaspoon dried coriander, or to taste

    1. Heat the oil in a large pan over medium heat; cook the onion in the hot oil until softened, about 5 minutes. Remove the pan from the heat and allow it to cool slightly, about 2 minutes. Add the garlic, ginger, cumin, turmeric, paprika and chilli powder to the onion; stir over low heat. Stir in chopped tomatoes and coconut milk; season with salt. Simmer, stirring occasionally, for about 10 minutes.
    2. Add prawns, fresh coriander and dried coriander to the curry sauce; cook for 1 minute before serving.
