Roasted fondant potatoes

    These roasted fondant potatoes are amazing; crispy on the outside, buttery and soft on the inside. A delicious way to roast potatoes for a special occasion.

    Serves: 4 

    • 75g butter, melted
    • 1 tablespoon chopped fresh thyme
    • 1 teaspoon salt
    • 1/2 teaspoon freshly ground black pepper
    • 1.3kg Yukon Gold or other yellow potatoes, cut into 2 1/2cm thick slices
    • 300ml vegetable stock
    • 2 cloves garlic, minced

    1. Preheat the oven to 240 C / Gas 9 and place oven rack in upper-middle position. Grease a high-rimmed baking tray with butter.
    2. Combine melted butter, thyme, salt and pepper in a bowl. Add potato slices and toss until fully coated. Place potatoes in a single layer on the prepared baking tray.
    3. Roast in the preheated oven until slightly golden, about 15 minutes.
    4. Flip potatoes over and roast for another 15 minutes.
    5. Flip potatoes and add vegetable stock and garlic; roast until tender, about 15 minutes.
