This is a hearty chicken stew made with chicken thighs, buckwheat and tomatoes, made with ease in a multi cooker or slow cooker.

1 tablespoon vegetable oil
1 onion, finely chopped
1 carrot, finely diced
500g chicken thighs
1 tomato, chopped
salt and freshly ground black pepper
2 tablespoons tomato puree
250ml water
200g buckwheat

Add oil to multi cooker bowl; stir in onions and carrots on 'saute' mode for 5 minutes. If using a slow cooker: heat oil in a pan and cook onions and carrots for a few minutes to soften.
Arrange chicken thighs on top; add chopped tomatoes and season with salt and pepper.
Mix tomato puree and water until well mixed; add to chicken and pour in buckwheat. Stir to cover all ingredients.
Cook on 'simmer' mode for 1 hour, or in a slow cooker on High for 4 to 6 hours, until chicken thighs are cooked through and buckwheat is tender.
