A simple, winter soup made in a multi cooker or slow cooker with buckwheat and vegetables. My kids eat this soup without realising it's packed with goodness.

2 tablespoons vegetable oil
1 onion, finely chopped
1 carrot, peeled and finely chopped
2 potatoes, peeled and cubed
salt and white pepper, to taste
1 tablespoon dried parsley
2 bay leaves

Pour oil into slow cooker or multi cooker; stir in finely chopped onion and carrots and cook for about 10 minutes. Add potatoes and buckwheat; stir to coat in the oil. Place lid on top and cook for 10 minutes.
Season with salt and white pepper; add dried parsley and bay leaves. Pour in 1.5 litres of water and stir well.
Slow cook on 'High' for 1 to 2 hours or until buckwheat is tender.
