Slow cooker buckwheat vegetable soup

    A simple, winter soup made in a multi cooker or slow cooker with buckwheat and vegetables. My kids eat this soup without realising it's packed with goodness.

    Serves: 6 

    • 2 tablespoons vegetable oil
    • 1 onion, finely chopped
    • 1 carrot, peeled and finely chopped
    • 200g buckwheat
    • 2 potatoes, peeled and cubed
    • salt and white pepper, to taste
    • 1 tablespoon dried parsley
    • 2 bay leaves
    • 1.5L water

    1. Pour oil into slow cooker or multi cooker; stir in finely chopped onion and carrots and cook for about 10 minutes. Add potatoes and buckwheat; stir to coat in the oil. Place lid on top and cook for 10 minutes.
    2. Season with salt and white pepper; add dried parsley and bay leaves. Pour in 1.5 litres of water and stir well.
    3. Slow cook on 'High' for 1 to 2 hours or until buckwheat is tender.
