This creamy courgette and vegetable soup is spiced up with turmeric and curry powder. It's so easy to make in a slow cooker.

2 tablespoons vegetable oil
1 onion, peeled and chopped
1 carrot, peeled and chopped
2 courgettes, trimmed and chopped
1 large potato, peeled and chopped
1/2 teaspoon ground turmeric
1 teaspoon curry powder
500ml vegetable stock
250ml full fat milk
2 tablespoons cream cheese
salt and black pepper, to taste

Heat oil in a slow cooker; add onions and carrots. Cook and stir for a few minutes; add potatoes and courgettes. Stir in curry powder and turmeric; add stock and season to taste with salt and pepper. Cover slow cooker and cook vegetables on HIGH for 1 and 1/2 hours.
Stir in milk and cream cheese; cook with the lid off, until milk has warmed through and cream cheese has dissolved. Puree the soup with an immersion blender until smooth.
