An easy not-too-sweet hazelnut and chocolate biscuit recipe that uses cocoa powder. The biscuit dough can be easily cut into shapes, such as stars or Christmas trees or hearts. Dust with icing sugar before serving for a more festive look.
Preheat oven to 160 C / Gas 3. Line a baking tray with baking paper.
Place hazelnuts in a food processor bowl; blend until fine.
Transfer ground nuts into a large bowl; sift in flour, cocoa powder, salt and baking powder. Stir in sugar and add softened butter until combined. Mix in beaten egg and work mixture into an even dough; wrap biscuit dough in clingfilm and refrigerate for 30 minutes.
Roll out dough to 1cm thick and stamp out stars (or other shapes). If the dough is too sticky to handle, add a little more flour. Place biscuits on prepared tray and bake in preheated oven for 15 to 18 minutes.
Cool biscuits on a wire rack; dust with icing sugar before serving.
