Gluten free Margherita pizza

    A homemade gluten free version of the classic Margherita pizza that will rival the traditional one!

    Ingredients
    Serves: 4 

    • 1/2 sachet (4g) dried active yeast
    • 2 teaspoons caster sugar
    • 350ml warm water
    • 500g gluten free flour
    • 1 tablespoon salt
    • 1 tablespoon extra virgin olive oil, plus more for drizzling
    • 2 or 3 tablespoons tomato pizza sauce, or as needed
    • 150g fresh mozzarella cheese, torn into pieces

    Method

    1. Dissolve yeast and sugar in warm water; set aside for a couple of minutes until mixture starts to look frothy.
    2. Sift flour into a large bowl. Add salt and create a well in the middle; pour in yeast mixture and oil. Mix well to create a dough.
    3. Transfer dough to a floured surface; knead until smooth. Place dough in a bowl, cover and let rise for two hours.
    4. Punch down dough; cover and let it rise for 30 minutes.
    5. Preheat oven to 200 C / Gas 6 and lightly grease a large baking tray.
    6. Transfer dough onto tray; flatten and shape into a pizza base about 1cm thick.
    7. Spread tomato pizza sauce on top of base; season with salt and drizzle olive oil on top.
    8. Bake in a preheated oven for 30 to 40 minutes.
    9. Scatter mozzarella on top of pizza and bake for a further 10 minutes, or until cheese has melted.
