Vegan carrot-ginger soup

    This smooth vegan potato, onion and carrot soup is flavoured with fresh ginger which will warm you through to your core on a chilly day.

    Ingredients
    Serves: 4 

    • 1 tablespoon of extra virgin olive oil
    • 1 shallot, peeled and finely chopped
    • 1 onion, peeled and finely chopped
    • 500g carrots, peeled and finely chopped
    • 2 medium potatoes, peeled and chopped
    • 1.5L of vegetable stock
    • 2 tablespoons of peeled and grated fresh ginger
    • salt and pepper, to taste
    • To garnish
    • finely chopped fresh parsley
    • 1 tablespoon of very thinly sliced fresh ginger

    Method

    1. Heat oil in a large saucepan over medium heat; stir in shallot and onion and cook for 1 minute. Add carrots and potatoes; cook and stir for a few minutes.
    2. Pour in vegetable stock and grated ginger; simmer soup for 45 minutes or until vegetables are soft.
    3. Blend soup until smooth; season to taste with salt and pepper to taste.
    4. Serve soup garnished with freshly chopped parsley and thinly sliced fresh ginger.
