Italian cheese and broccoli pasta bake

    A simple pasta, broccoli and cheese bake. Best to use tender stem broccoli as it will crisp up better in the pan.

    Serves: 6 

    • 1kg tenderstem broccoli, halved
    • 600g penne or macaroni pasta
    • 2 tablespoons extra virgin olive oil, or as needed
    • salt and freshly ground pepper, to tatse
    • 300g Primosale cheese (or other sheep milk cheese), cubed

    1. Preheat the oven to 170 C / Gas 3.
    2. Cook the broccoli in lightly salted boiling water for 5 minutes; scoop out broccoli and cook pasta in reserved water until al dente.
    3. Heat oil in a pan over high heat; add cooked broccoli and fry for about 5-10 minutes, stirring occasionally, until slightly charred and crispy. Season to taste with salt and pepper.
    4. Layer the pasta, broccoli and cheese in a baking dish. Cook in preheated oven for 30 minutes, or until golden brown on top. Serve hot.
