Soft focaccia bread

    This is a basic recipe for a soft-style Italian focaccia bread. You can add ingredients like sundried tomatoes, olives, mozzarella or flavourful herbs such as rosemary or sage if you like.

    Serves: 6 

    • 1 (15g) cube of fresh yeast
    • 250ml warm water
    • 1 boiled potato, crushed
    • 500g plain flour
    • 1 pinch of salt
    • oil, to grease the pan
    • 1 teaspoon of sugar

    1. Dissolve fresh yeast in warm water in a large bowl. Add the crushed potato, plain flour, salt and sugar. Combine into a ball and knead vigorously on a lightly floured surface.
    2. Lightly grease a bowl with some oil; place focaccia dough in bowl and cover. Leave to rise for about an hour.
    3. Lightly grease a baking tray; place dough on prepared tray and spread it out to fit tray. Prick the focaccia dough with a fork and set aside to rise for 2 hours.
    4. Preheat oven to 180 C / Gas 4. Place a small saucepan with lukewarm water in the oven to provide steam while bread is baking.
    5. Bake bread in preheated oven until golden, about 30 minutes.
