Italian spinach and ricotta pasta

    A simple vegetarian pasta dish with ricotta cheese and spinach that's ready in minutes and will satisfy the whole family!

    Serves: 4 

    • 500g rigatoni pasta
    • 200g of fresh ricotta cheese
    • 50g butter
    • salt and freshly ground black pepper
    • 50g of cooked spinach, finely chopped
    • 2 egg yolks
    • hot milk, as needed

    1. Bring a large pot of lightly salted water to the boil. Add pasta and cook until al dente according to package instructions; drain.
    2. Melt ricotta and butter in a saucepan; season with salt and pepper. Stir in cooked pasta, spinach and egg yolks. If the pasta mixture is too thick, mix in a little warm milk or melted butter. Serve hot.
