500g rigatoni pasta
200g of fresh ricotta cheese
salt and freshly ground black pepper
50g of cooked spinach, finely chopped
2 egg yolks
hot milk, as needed

Bring a large pot of lightly salted water to the boil. Add pasta and cook until al dente according to package instructions; drain.
Melt ricotta and butter in a saucepan; season with salt and pepper. Stir in cooked pasta, spinach and egg yolks. If the pasta mixture is too thick, mix in a little warm milk or melted butter. Serve hot.
