This one-pot chicken casserole is made with tasty veg like courgette and colourful peppers. White wine, stock and creme fraiche make for a lovely sauce.
Boyfreind enjoyed this and so did I so win win on this dish. I added few more vegies to it (leek, chilie and mushrooms) and omitted other peppers, used orange juice with a dash of rice wine vinegar instead of wine and chicken stock. Used different ingredients. Added half a red chilli for colour as boyfreind cant eat capsicum. Added half a leek and mushroms and cut up chicken to bite sizes. Used orange juice with a dash of rice wine vinegar. - 08 Jul 2010
Was looking for a simple, tasty casserole recipe to give me a starting point with the ingredients I had and found it. Although, I like a few of the others substituted peppers for leeks and carrots. - 19 Jan 2014
