    About this recipe: This one-pot chicken casserole is made with tasty veg like courgette and colourful peppers. White wine, stock and creme fraiche make for a lovely sauce.

    Ingredients
    Serves: 4 

    • 4 skinless chicken breast fillets
    • 1 teaspoon olive oil
    • 1 clove of garlic, chopped
    • 1 red pepper, sliced
    • 1 yellow pepper, sliced
    • 2 courgettes, sliced
    • 1 red onion, chopped
    • 120ml white wine
    • 125ml chicken stock
    • 250ml reduced fat creme fraiche
    • 1-2 tablespoons chopped fresh tarragon
    • black pepper to taste

    Method
    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Brown the chicken fillets on the hob using a casserole and a teaspoon of oil.
    2. Add the garlic, peppers, courgettes and onion and cook for 2 minutes more.
    3. Pour in the white wine and chicken stock and bring to the boil, then reduce the heat and simmer for 20 minutes until the chicken is thoroughly cooked and the liquid has reduced.
    4. Stir in the creme fraiche, tarrogon and some black pepper.
    5. Serve and enjoy.

    Boyfreind enjoyed this and so did I so win win on this dish. I added few more vegies to it (leek, chilie and mushrooms) and omitted other peppers, used orange juice with a dash of rice wine vinegar instead of wine and chicken stock. So not quite the original recipe, but am sure from how good it tasted with these tweaks original rocks as well. - 08 Jul 2010

    Used different ingredients. Added half a red chilli for colour as boyfreind cant eat capsicum. Added half a leek and mushroms and cut up chicken to bite sizes. Used orange juice with a dash of rice wine vinegar. - 08 Jul 2010

    Was looking for a simple, tasty casserole recipe to give me a starting point with the ingredients I had and found it. Although, I like a few of the others substituted peppers for leeks and carrots. - 19 Jan 2014
