Chickpea, celery and raisin salad

    A very tasty, low fat chickpea salad that's sweetened with raisins and gets that necessary crunch from celery.

    Serves: 2 

    • 1 (400g) tin of chickpeas, rinsed and drained
    • 30g raisins
    • 1 stalk of celery, thinly sliced
    • 2 tablespoons of extra virgin olive oil
    • salt and freshly ground black pepper, to taste
    • the juice of 1/2 lemon
    • 1 tablespoon freshly chopped parsley

    1. Place chickpeas in a salad bowl; stir in raisins and sliced celery.
    2. Mix olive oil, salt, pepper, lemon juice and fresh parsley together in a small bowl. Pour dressing on top of chickpea and celery mixture; toss well and store in the fridge for 1 hour before serving.
