Pumpkin syrup

    With just three ingredients it's quick, easy and cheap to make your own pumpkin syrup. Use it as a sweetener for tea, drizzle over ice cream or French toast.

    Makes: 1 bottle

    • 300g light brown soft sugar
    • 330ml water
    • 3 heaped tablespoons pumpkin puree, tinned or homemade
    • mixed spice or gingerbread spice to taste

    1. In a small saucepan heat sugar and water and stir till the sugar has dissolved.
    2. Add pumpkin puree and 2 teaspoons mixed spice. Whisk to combine and let come to the boil for a brief moments. Taste and add more mixed spiced if desired.
    3. Pour through a fine sieve and let cool. Pour in a steriles bottle, close with a cork and store in the fridge. Use within 7 to 10 days.
