This colourful Italian-style salmon salad has cherry tomatoes, grated carrot, mozzarella and three types of lettuce.

2 tablespoons olive oil, plus more for drizzling
1 (200g) salmon fillet
salt, to taste
30g rocket leaves
1/4 iceberg lettuce, sliced
30g lambs lettuce
6 or 7 cherry tomatoes, halved
6 cubes fresh buffalo mozzarella
75g carrot thinly sliced or grated
balsamic vinegar, to taste

Heat 2 tablespoons olive oil over high heat; add salmon and cook on each side for a few minutes or until cooked to your liking; season salmon with salt and break up into pieces.
Place rocket, iceberg lettuce and lambs lettuce in a large bowl. Add the tomatoes, mozzarella, carrot and salmon. Drizzle a little olive oil and balsamic vinegar over salad; toss well and serve.
