Italian salmon salad

    This colourful Italian-style salmon salad has cherry tomatoes, grated carrot, mozzarella and three types of lettuce.

    Serves: 2 

    • 2 tablespoons olive oil, plus more for drizzling
    • 1 (200g) salmon fillet
    • salt, to taste
    • 30g rocket leaves
    • 1/4 iceberg lettuce, sliced
    • 30g lambs lettuce
    • 6 or 7 cherry tomatoes, halved
    • 6 cubes fresh buffalo mozzarella
    • 75g ​​carrot thinly sliced or grated
    • balsamic vinegar, to taste

    1. Heat 2 tablespoons olive oil over high heat; add salmon and cook on each side for a few minutes or until cooked to your liking; season salmon with salt and break up into pieces.
    2. Place rocket, iceberg lettuce and lambs lettuce in a large bowl. Add the tomatoes, mozzarella, carrot and salmon. Drizzle a little olive oil and balsamic vinegar over salad; toss well and serve.
