Jam sponge cake

    This cake is so quick and easy to prepare using a food processor. I use a chunky strawberry jam but this recipe also works well with fresh blueberries.

    Serves: 6 

    • 250g superfine grade 00 flour
    • 150g caster sugar
    • zest of 1 lemon
    • 1 heaped teaspoon baking powder
    • pinch of salt
    • 175g butter, softened
    • 2 eggs
    • 1 yolk
    • 250g strawberry jam

    1. Preheat oven to 180 C / Gas 4 and lightly grease (or line) a 26cm cake tin.
    2. Place flour, caster sugar, lemon zest, baking powder and salt into a food processor bowl. Add softened butter.
    3. Beat 2 eggs and 1 egg yolk together in a small bowl; add to flour mixture; blend until mixture is smooth.
    4. Spread a little more than half of the mixture into the prepared cake tin; add dollops of jam on top and cover with remaining cake mixture, smoothing it over on the top.
    5. Bake in preheated oven for 25 to 30 minutes or until cooked through.
    6. Cool cake on a wire rack; dust with icing sugar before serving.
