Mascarpone cream with rum

    This version of the classic Italian mascarpone cream has rum added. Delicious served with a slice of panettone at Christmas.

    Ingredients
    Makes: 500 ml cream

    • 500g mascarpone cheese
    • 100g caster sugar
    • 4 eggs, separated
    • 6 tablespoons of rum

    Method

    1. Beat the mascarpone cheese and sugar in a large bowl until well mixed. Add the egg yolks to the mixture; continue to beat, drizzling in the rum as you mix.
    2. Wash and dry the beaters; beat egg whites in a clean glass bowl until stiff peaks form.
    3. Gently fold egg whites into cream mixture; store the cream in the fridge until ready to serve.

    Note:

    This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.
