Fluffy dessert pancakes

    Instead of buttermilk, you can use a little bit of dried active yeast to create lovely fluffy pancakes. Serve with chocolate sauce and some fresh fruit for an easy family dessert.

    Serves: 6 

    • 1 egg
    • 50g butter, melted
    • 150g 00 grade flour or self raising flour
    • 1 (7g sachet) dried active yeast
    • 1 pinch of salt
    • 2 tablespoons of caster sugar
    • 250ml milk
    • butter or oil for frying

    1. Add egg, melted butter, flour, yeast. salt, sugar and milk into a blender; process until combined. Alternatively, mix all the ingredients together in a large bowl with a fork.
    2. Heat a pan, preferably non-stick, over medium heat. Add a knob of butter or some sunflower oil; swirl pan to coat surface.
    3. Pour batter onto pan, one or two tablespoons at a time to form small pancakes.
    4. Cook over medium heat until bubbles appear on the surface; flip pancakes and cook on other side til golden brown. Repeat with remaining pancake batter.
