Fritelle di Carnevale (Italian carnival doughnuts)

    Italian fritelle are prepared for different occasions and there are many different recipes. These are made with a grated apple and Marsala wine.

    Makes: 20 frittelle

    • 350g plain flour
    • 100g caster sugar
    • 2 eggs
    • 120ml Marsala wine
    • 1 apple, peeled, cored and grated
    • 1/2 lemon, zested
    • 1/2 orange, zested
    • 120ml orange juice
    • 120m lukewarm milk
    • 1 teaspoon melted butter
    • 1 pinch salt
    • 1 level teaspoon baking powder
    • oil for frying
    • icing sugar for dusting

    1. In a bowl, add all the ingredients except oil and icing sugar. Beat till well combined and smooth.
    2. Heat plenty of oil in a deep fryer or heavy saucepan.
    3. Add spoonfuls of the mixture to the hot oil and deep fry till well browned. Degrease on kitchen towels. Sprinkle with icing sugar and serve warm.
