Italian fritelle are prepared for different occasions and there are many different recipes. These are made with a grated apple and Marsala wine.

Ingredients
Makes: 20 frittelle
- 350g plain flour
- 100g caster sugar
- 2 eggs
- 120ml Marsala wine
- 1 apple, peeled, cored and grated
- 1/2 lemon, zested
- 1/2 orange, zested
- 120ml orange juice
- 120m lukewarm milk
- 1 teaspoon melted butter
- 1 pinch salt
- 1 level teaspoon baking powder
- oil for frying
- icing sugar for dusting

- In a bowl, add all the ingredients except oil and icing sugar. Beat till well combined and smooth.
- Heat plenty of oil in a deep fryer or heavy saucepan.
- Add spoonfuls of the mixture to the hot oil and deep fry till well browned. Degrease on kitchen towels. Sprinkle with icing sugar and serve warm.
