Spinach ricotta pie

    A simple recipe for those with little time but not at the expense of taste! This quick and easy pie can be prepared with both ready made puff pastry and shortcrust pastry.

    Makes: 1 pie

    • 500g spinach
    • 450g ricotta
    • ground nutmeg
    • salt
    • 2 tablespoons Parmesan cheese
    • 1 egg
    • 1 (375g) packet ready rolled shortcrust or puff pastry

    1. Add spinach and 125ml water to a large pot and cook spinach till soft, about 10 minutes. Let cool, then drain and squeeze dry to remove excess liquid. Chop.
    2. Preheat your oven to 180 C / Gas 4.
    3. In a bowl add spinach, ricotta, nutmeg, salt and Parmesan.
    4. Mix everything together and add the egg. Mix well.
    5. Evenly spread the ricotta and spinach filling over the pastry.
    6. Bake till golden brown, about 30 minutes.
