Pesto pizza

    Serves: 6 

    • 1 large pre-baked pizza base
    • 8 tablespoons pesto
    • 1 ripe tomato, chopped
    • 75g green pepper, chopped
    • 30g black olives, pitted and chopped
    • 1/2 small red onion, chopped
    • 1/4 (390g) tin artichoke hearts, drained and sliced
    • 150g feta cheese, crumbled

    Prep:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Preheat oven to 230 C / Gas mark 8.
    2. Spread pesto on pizza base. Top with tomatoes, peppers, olives, red onions, artichoke hearts and feta cheese.
    3. Bake for 8 to 10 minutes, or until cheese is melted and browned.

    A friend brought a version of this to a dinner party as an appetizer, she also added a little mozarella and parmesan cheese, it was a hit!     Very tasty! My first dish using pesto and it turned out great! My hubby & 3 yr old loved it!
