Deborah's chocolate mousse

    This dark chocolate mousse, flavoured with a touch of espresso, is always enjoyed by all guests whenever I make it.

    Serves: 6 

    • 250g dark chocolate, melted
    • 1 tablespoon of butter
    • 120ml water
    • 75ml espresso coffee
    • 2 egg yolks
    • 1 1/2 tablespoons caster sugar
    • 3 egg whites
    • 125ml single cream, whipped

    1. Stir melted chocolate, butter, water and espresso coffee together with a wooden spoon until smooth; set aside to cool.
    2. Beat egg yolks and caster sugar together until and creamy.
    3. Stir cooled chocolate mixture into egg yolk mixture.
    4. Whisk egg whites in a clean bowl until stiff peaks form; fold in chocolate mixture until combined.
    5. Spoon chocolate mousse into individual serving dishes or small glasses.
    6. Store in the fridge for at least 4 hours before serving.
