Apple Christmas fruit cake

    Unlike traditional fruitcakes, this fruit cake with fresh apples can be eaten without letting it mature. Because there is no fat added in this recipe, it is important to grease your loaf tin very well, or line it with greaseproof paper.

    Makes: 1 fruit cake

    • 500g apples, peeled, cored and diced
    • 1 tablespoon rum
    • 100g caster sugar
    • 180g raisins
    • 180g whole unpeeled almonds
    • 330g plain flour
    • 4 teaspoons baking powder
    • 1 tablespoon unsweetened cocoa
    • 2 teaspoons mixed spice, more to taste
    • 1/4 to 1/2 teaspoon cinnamon
    • 1 pinch salt
    • 250 ml milk

    1. In a bowl add apples, sugar and rum. Stir to mix, cover and let marinate overnight.
    2. Mix raisins, almonds, flour, baking powder, cocoa, mixed spice, cinnamon and salt in a bowl. Add apples and stir till well mixed. Then gradually add milk till everything is evenly moistened.
    3. Preheat your oven to 180 C / Gas 4. Line a loaf tin with greaseproof paper or grease a nonstick loaf tin.
    4. Tip mixture in the prepared ihn and bake in the preheated oven for 1 hour.
