This is a super easy gingerbread recipe - just mix together all ingredients, spread it on a baking tray and bake.

350g plain flour
2 teaspoons vanilla sugar
200g ground almonds
15g mixed spice
1/2 teaspoon ground cloves
1 to 2 teaspoons ground cinnamon
4 teaspoons baking powder
150g butter or margarine
2 tablespoons honey
1 tablespoon honey for brushing

Preheat your oven to 200 C / Gas 6. Grease a baking tray or line with greaseproof paper.
Mix flour, sugar, vanilla sugar, almonds, spices and baking powder in a bowl. Melt butter and honey in a small saucepan and let cool slightly. Stir in eggs, one at a time, and stir till smooth. Mit the liquid ingredients with the solid ingredients and stir well to combine.
Tip mixture onto prepared baking tray and spread evenly with a spatula. Bake for 20 minutes.
In a saucepan heat 1 tablespoon honey with a little water to thin it and brush on the gingerbread while Stil warm. Decorate with almonds and cut into quarters.
