An easy vegan salad with salsify. If you have never prepared this tasty root veg, this is a good recipe to start.

2 tablespoons white wine vinegar
2 tablespoons lemon juice
2 tablespoons walnut oil
200g mixed leaf salad
parsley for garnish

In a saucepan add water and vinegar. Trim and peel salsify and cut diagonally into thin slices. Drop into the vinegar water instantly to prevent browning.
Bring water to the boil and cook salsify till they can be pierced easily with a sharp knife, about 15 minutes total. Drain well and place in a bowl. Add oil and lemon juice and let marinate for a few minutes. Season with salt.
Arrange leaf lettuce on plates and top with salsify. Garnish with parsley and serve.
