Preheat oven to 180 C / Gas mark 4. Grease and flour a 23x33cm (9x13 in) baking tin.
In a large bowl, combine the flour, sugar, cocoa, bicarb, baking powder and salt. Make a well in the centre and pour in the eggs, coffee, milk, oil and vinegar. Mix until smooth, batter will be thin. Pour into prepared tin.
Bake in the preheated oven for 35 to 40 minutes, or until a cocktail stick inserted into the centre of the cake comes out clean. Allow to cool in the tin before slicing and serving.
I varied the ingredients after reading the reviews and replaced the coffee with same amount of water and 1 tsp vanilla essence and varied the quantities of the raising agents using 1 tsp bicarbonate of soda and 3 tsp of baking powder. It worked out well, kids loved it, easy cake. Also on making this recipe a 2nd and 3rd time I whisked eggs and wet ingredients before adding to the dry ones and there was a great improvement, cake rose beautifully both times - 02 Jan 2013
