2 eggs, beaten
50g butter, melted
2 tablespoons vanilla extract
1 pint milk
4 tablespoons caster sugar
1 (500g) white loaf, cut into 2.5cm cubes
120g chopped pecans
100g caster sugar

Preheat oven to 170 C / Gas mark 3. Lightly grease a 23x33cm dish.
In a large bowl, stir together eggs, butter, vanilla and milk. Gradually add 4 tablespoons sugar and mix thoroughly until sugar is dissolved.
Place bread cubes in bottom of prepared dish. Pour liquid over bread, fully saturating all bread. Sprinkle pecans on top.
Bake in preheated oven for 60 minutes, until golden. Meanwhile, combine all ingredients for the sauce in a small saucepan. Warm over low heat, stirring constantly, until sauce is gently boiling. Pour sauce over baked bread pudding and serve.
