No-bake white chocolate cheesecake

    Luxurious melt in mouth white chocolate cheesecake.

    Serves: 10 

    • 100g melted butter
    • 225g digestive or ginger biscuits, crushed
    • 11g gelatine sachet
    • 3 tablespoons water
    • 450g soft cheese, softened
    • 275g white chocolate, melted
    • 375ml double cream
    • cocoa powder to decorate

    Prep:1hr  ›  Extra time:8hr chilling  ›  Ready in:9hr 

    1. Mix melted butter and crushed biscuits together. Press into base of a deep loose-bottomed 20cm cake tin and chill until needed.
    2. Sprinkle gelatine over water in a small bowl. Leave to stand for 10 minutes. Dissolve over a pan of hot water. Leave to cool.
    3. Beat together soft cheese and melted white chocolate.
    4. In a separate bowl, whip the cream to soft peaks.
    5. Add gelatine to cheese mixture, then gradually fold in the whipped cream.
    6. Spoon into prepared tin, chill until set, best overnight.
    7. To serve: Remove from tin, dust with a little cocoa powder or drizzle melted dark chocolate over and serve with a side of a seasonal fruit coulis.

    amazing recipe, I have an egg allergy so was perfect. I have a veggie round for xmas so didnt put in the gellatine but used a little icing sugar to stiffen and added a vanilla pod. My son was in heaven scrapping out the bowl, I'm sure it will go down very well tomorrow, thank you  -  24 Dec 2011


    My favourite cheesecake! This is now one of my specialities! Very easy to follow, great cake - could do with photos as only happened upon this by chance. Have altered recipe slightly to accommodate my tastes.  -  24 Jun 2012
