Favourite meatloaf

    This is an easy, tasty meatloaf which very rarely has any leftovers. Trust me - it tastes as good as it smells! Serve with mash and broccoli.

    Serves: 8 

    • 100g dark brown sugar
    • 120ml tomato ketchup
    • 650g lean minced beef
    • 180ml milk
    • 2 eggs
    • 1 1/2 teaspoons salt
    • 1/4 teaspoon ground black pepper
    • 1 small onion, diced
    • 1/4 teaspoon ground ginger
    • 50g cream crackers, crushed into crumbs

    Prep:20min  ›  Cook:1hr  ›  Ready in:1hr20min 

    1. Preheat oven to 180 degrees C. Lightly grease a loaf tin.
    2. Press the brown sugar in the bottom of the tin and spread the ketchup over the sugar.
    3. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup.
    4. Bake in preheated oven for 1 hour or until juices are clear.

    nice twist on this recipe is only but half the mix in the loaf tin then add some mashed potato then add rest of mix on top. This way you get mashed potato all the way through  -  08 Apr 2013

    A very easy dish to prepare and great taste. I was looking for a easy meat loaf recipe that the family would enjoy and this was perfect. The brown sugar and tomato ketchup add extra flavour.  -  05 Feb 2012
