About this recipe:Cut these tasty biscuits into animal shapes. Made with buttermilk, oats and honey. Kids love them, and mums don't have to worry because they're not overly sweet!
40g rolled oats
100g plain flour
1/4 teaspoon bicarbonate of soda
1/4 teaspoon salt
2 teaspoons honey

Preheat the oven to 200 C / Gas mark 6. Grind oats until fine using a blender or food processor.
In a medium bowl, stir together the blended oats, flour, bicarbonate of soda and salt. Rub in the butter using a pastry blender or your fingers until the butter lumps are smaller than peas. Stir in the buttermilk and honey to form a stiff dough. On a lightly floured surface, roll the dough out to 3mm in thickness. Cut into desired shapes with biscuit cutters. Place biscuits 2 to 3cm apart onto baking trays.
Bake for 5 to 7 minutes in the preheated oven, until edges are lightly browned. Remove from baking trays to cool on wire racks.
Brilliant recipe, quick easy and fun to make with kids.
I had no buttermilk so made a substitute by mixing 240ml of milk with 1tbspn of lemon juice.
